Establishment Description

The guest suites echo Cape Dutch farm buildings.  The style developed in the Cape Colony of the 17th and 18th century: outer walls are whitewashed and decorated with ornate gables and thatched roofs.  Interiors are pleasantly cool in summer (due to thick walls) and are heated by open hearths in winter.
Babylonstoren has an exceptionally well-preserved werf.  It consists of a main residence, old cellar, koornhuis (where wheat and hay was stored) and row of service buildings, bell tower, ornate fowl pen and dove cote surrounded by the traditional low whitewashed walls.  Some of these have been converted into guest accommodation, while a disused kraal was turned into our restaurant, Babel.

All the cottages have underfloor heating and most have fireplaces
• All cottages have either a garden or vineyard view with an area for alfresco dining
• For families or guests travelling in a small group, Babylonstoren’s historic Cape Dutch home, the five-bedroomed Manor House is available on request only on an exclusive use basis. Please contact
us for further details.

Food Philosophy

We don`t like to tamper unduly with food or slash it to bits - pick, clean, serve is our approach.  Food reflects the colours of the season: in summer we may serve you an Orange Salad of pumpkin, oranges, carrots and maybe a handful of pomegranate seeds; in winter there will perhaps be a slow-cooked leg of lamb to warm you up.

Chef's Profile

Stefan resizedStefan started his career as a chef in 2004 with a qualification from the TCA. After he completed his training at Beluga restaurant in Cape Town, he explored his European roots for 4 years. In Leamington Spa, a small town in Warwickshire he worked at the Mallory Court Hotel (1 Michelin star), under Chef Simon Haigh. His passion and drive soon took him to Petrus (1 Michelin star) in the capital London, followed by Hakkasan & Yauatcha (1 Michelin star & St Pellegrino Top 50). Stefan returned to South Africa for two years to experience what Margot Janse had to offer at Le Quartier Français (St Pellegrino Top 50). After taking South African food to a new level he returned to the UK to work under Adam Gray at Rhodes 24 in London where he learnt classic British cooking. This was followed by the need for Michelin star tapas style food at Maze in London (1 Michelin star) under chef Jason Atherton. The need reconnect with produce brought him back to South Africa, where he joined the Babylonstoren opening team in 2010. Working alongside Maranda Engelbrecht and the Babylonstoren team, creating simple and honest food from a 3.5 ha back yard pantry is any chefs’ dream come true.
